You note how "on the third day" and Jesus' "hour" point ahead to his death and resurrection, his departure and return to the Father. In Jn. 13-16 Jesus teaches his disciples about this time of departure, but especially about his special gift he will leave with them, the Paraclete, the Spirit of truth. And already in 1:31-34 John the Baptist says that while he baptizes with water, this one on whom the Spirit descends from heaven and remains will baptize with the Spirit. A similar contrast comes in Jn. 4, the well water of the Samaritan woman and the living water of Jesus; in 7:38-39 Jesus says his living water is the Spirit, which he will give to his disciples after he is glorified. So in Jn. 2, even though it is not yet his hour, his future gift is shown already through this sign of new wine (another liquid metaphor for the Spirit), a contrast with the Jewish water of purification.
